Description:

Sesame oil, derived from sesame seeds, is one of the oldest known crop-based oils, with a distinctive nutty flavor when made from toasted seeds. It is used widely in cooking, particularly in Asian cuisine, where the toasted variety adds a unique aroma to dishes, though it may not be ideal for frying due to its tendency to become bitter. The oil is typically extracted through mechanical pressing or solvent extraction. Sesame seeds are protected by a capsule that bursts only when ripe, a process known as dehiscence, which requires hand harvesting. Tanzania is the largest producer and consumer of sesame oil, with increasing demand in other parts of Africa and Asia due to rising incomes and urbanization. Sesame oil is rich in polyunsaturated fatty acids, particularly oleic and linoleic acids, which make up about 85% of its fatty acid content, and has a high percentage of unsaponifiable matter. While refined sesame oil is lighter in color and flavor, many consumers prefer unrefined oil for its superior taste and nutritional benefits.
